Tarte Tatin is a classic French dessert that features caramelized apples baked atop a buttery pastry, traditionally made with a puff or shortcrust base. The dish is said to have originated in the late 19th century at the Hôtel Tatin in Lamotte-Beuvron, France, where it was created by accident by the Tatin sisters, Stéphanie and Caroline. Legend has it that Stéphanie was attempting to make a standard apple pie but inadvertently reversed the process, placing the apples in the pan with sugar and butter, covering them with pastry, and baking it upside down. This happy accident resulted in a delightful dessert that has since become a beloved staple in French cuisine, celebrated for its rich flavors and delightful contrast between sweet caramel and the flaky crust. Tarte Tatin embodies the French spirit of culinary improvisation, showcasing how a simple mistake can lead to a delicious creation that has endured for generations.
